Ingredients (Serves 4):

1 medium butternut squash, peeled and diced

1 onion, chopped

2 cloves garlic, minced

1-inch ginger, grated

500ml vegetable stock

1 tbsp olive oil or coconut oil

Salt & pepper to taste

How to Make It:

Heat oil in a deep pan, sauté onion, garlic, and ginger until soft.
